Ingredients
- 1 pouch of SOMOS™ Mexican Brown Rice
- 1 pouch of SOMOS™ Mexican Peacadillo™
- 6 corn tortillas
- ½ avocado, sliced
- ¼ red onion, sliced
- 2 tbsp cilantro, chopped
- 3 tbsp cotija cheese
- 1 lime, cut into wedges
- 2 tbsp vegetable or olive oil
Prep
- In a large cast iron skillet or comal, heat oil and cook tortillas until warm and pliable
- Microwave SOMOS™ Mexican Brown Rice and SOMOS™ Mexican Peacadillo™ for 90 seconds each and scoop into each tortilla
- Top the tacos with cotija cheese, cilantro, and onion. Serve with avocado and lime.
