Ingredients
- 1 jar SOMOS™ Red Enchilada Sauce
- 1 pouch SOMOS™ Mexican Black Beans
- 2 tbsp olive oil
- 3-4 cups chicken broth
- 1 cup canned or frozen corn
- 2 cups shredded rotisserie chicken
- ¼ cup sour cream
- ¼ cup fresh cilantro
- 1 jalapeño, sliced
- 1 avocado
- 2 cups tortilla strips (optional)
Prep
- Heat oil in a large pot and add SOMOS™ Red Enchilada Sauce.
- Add 3 cups chicken broth and season with salt and pepper to taste. Add more chicken broth if needed.
- Add SOMOS™ Mexican Black Beans , corn, shredded chicken and bring to a boil.
- Serve with avocado, cilantro, sour cream, jalapeño slices and tortilla strips.
