Ingredients
- 1 pouch of SOMOS™ Spicy Refried Beans
- 1 bag of SOMOS™ Unusually Thick & Crunchy Tortilla Chips
- ½ red onion, diced
- 1 jalapeño, sliced
- 1 tomato, diced
- 2 tbsp cilantro, chopped
- 10oz panela cheese, cut into cubes
- ½ cup Monterey jack cheese
- ½ avocado, sliced
- 2 tbsp vegetable or olive oil
Prep
- Preheat oven to 350°F
- In a small bowl, combine tomato, onion, and cilantro to make Pico de Gallo
- Microwave SOMOS™ Spicy Refried Beans for 90 seconds
- In a large bowl, combine SOMOS™ Spicy Refried Beans, half of the sliced jalapeño and panela cheese and add to a casserole dish
- Top with the monterey jack cheese and place in oven and cook for 15 minutes until cheese is melted and the edges are bubbly
- Garnish with Pico de Gallo, avocado and jalapeño
- Serve with SOMOS™ Unusually Thick & Crunchy Tortilla Chips
