Ingredients
- 1 pouch of SOMOS™ Smoky Chipotle Mushrooms
- 1 pouch of SOMOS™ Spicy Refried Beans
- 8 corn tortillas
- ¼ cup cilantro, chopped
- ½ avocado, sliced
- ¼ cup sliced pickled red onion
- 1 lime, cut into wedges
- 2 tbsp vegetable or olive oil
Prep
- In a large cast iron skillet or comal, heat oil and cook tortillas until warm and pliable
- Separately microwave SOMOS™ Smoky Chipotle Mushrooms and SOMOS™ Spicy Refried Beans for 90 seconds each and divide evenly onto tortillas
- Garnish with pickled onion, avocado, and cilantro
- Serve with lime wedges & enjoy!
