Ingredients

  • 1 pouch of SOMOS™ Smoky Chipotle Mushrooms
  • 1 pouch of SOMOS™ Spicy Refried Beans
  • 8 corn tortillas
  • ¼ cup cilantro, chopped
  • ½ avocado, sliced
  • ¼ cup sliced pickled red onion
  • 1 lime, cut into wedges
  • 2 tbsp vegetable or olive oil

Prep

  1. In a large cast iron skillet or comal, heat oil and cook tortillas until warm and pliable
  2. Separately microwave SOMOS™ Smoky Chipotle Mushrooms and SOMOS™ Spicy Refried Beans for 90 seconds each and divide evenly onto tortillas
  3. Garnish with pickled onion, avocado, and cilantro
  4. Serve with lime wedges & enjoy!
