Ingredients
- 1 pouch of SOMOS™ Spicy Refried Beans
- 1 jar of SOMOS™ Salsa Verde Mild Salsa
- 1 jar of SOMOS™ Cuatro Chiles Medium Salsa
- 4 eggs
- 4 corn tortillas
- ¼ cup cotija cheese
- ¼ cup red onion, chopped
- 2 tbsp cilantro, chopped
- 2 tbsp olive oil or vegetable oil
Prep
- In a large frying pan heat oil and cook tortillas until warm and pliable
- Crack one egg onto each tortilla and cover with a lid. Cook for 2 minutes until the whites of the eggs are opaque
- Add SOMOS™ Jalapeño Pepper Salsa Verde to one side and SOMOS™ Cuatro Chiles Taquería Salsa to the other
- Microwave SOMOS™ Spicy Refried Beans for 90 seconds
- Transfer to a plate and divide the eggs with SOMOS™ Spicy Refried Beans
- Garnish with cotija cheese, cilantro, and red onion
