Ingredients
- 1 pouch of SOMOS™ Cilantro Lime White Rice
- 1 pouch of SOMOS™ Mexican Black Beans
- 8 corn tortillas
- 3 tbsp crema or sour cream
- ¼ cup red cabbage, shredded
- ¼ cup cotija cheese
- 1 radish, thinly sliced
- 2 tbsp cilantro, chopped
- 1 lime, cut into wedges
- 2 tbsp vegetable or olive oil
Prep
- In a large cast iron skillet or comal, heat oil and cook tortillas until warm and pliable
- Microwave SOMOS™ Cilantro Lime White Rice and SOMOS™ Mexican Black Beans for 90 seconds each
- Starting with the rice, distribute both the rice & beans evenly between each tortilla
- Garnish with crema, cabbage, cilantro, and radish
- Serve with lime & enjoy!
