• 10 corn tortillas
  • 2 lb cooked shredded chicken (or any protein)
  • 1 jar of SOMOS™ Red Enchilada Sauce
  • 8oz shredded Monterrey jack cheese
  • Toppings of your choice


  1. Preheat oven to 400° F. As oven heats, warm tortillas on stovetop or in a microwave, wrapping them in a damp paper towel and heating for 30 seconds.
  2. Add a spoonful of shredded chicken into each tortilla and roll tortilla up. Place side-by-side in a baking dish, seam side down.
  3. Completely cover tortillas with SOMOS™ Red Enchilada Sauce and top with lots of cheese.
  4. Bake for about 10-15 minutes or until cheese is melty. Top with your favorite toppings like avocados, cilantro & anything else!
