Ingredients
- 1 jar of SOMOS™ Red Enchilada Sauce
- 1 pouch of SOMOS™ Pinto & Black Beans
- 10 corn tortillas
- ½ cup vegetable oil
- ½ cup shredded cheese of your choice
- ¼ cup sour cream
- ¼ cup fresh cilantro, chopped
- ¼ cup onion, diced
Prep
- Heat oil in a skillet and lightly fry each tortilla.
- Fill with 1 spoonful of SOMOS™ Pinto & Black Beans
- Fold and place on a baking dish.
- Add SOMOS™ Red Enchilada Sauce over the enchiladas and top with cheese.
- Bake for 15 minutes at 350ºF or until the cheese is melted.
- Top with sour cream, cilantro and onion.
