Ingredients

  • 1 jar of SOMOSâ„¢ Red Enchilada Sauce
  • 1 pouch of SOMOSâ„¢ Pinto & Black Beans
  • 10 corn tortillas
  • ½ cup vegetable oil
  • ½ cup shredded cheese of your choice
  • ¼ cup sour cream
  • ¼ cup fresh cilantro, chopped
  • ¼ cup onion, diced

Prep

  1. Heat oil in a skillet and lightly fry each tortilla.
  2. Fill with 1 spoonful of SOMOSâ„¢ Pinto & Black Beans
  3. Fold and place on a baking dish.
  4. Add SOMOSâ„¢ Red Enchilada Sauce over the enchiladas and top with cheese.
  5. Bake for 15 minutes at 350ºF or until the cheese is melted.
  6. Top with sour cream, cilantro and onion.
