This recipe may seem simple but it packs a punch. With smoky and delicious red enchilada sauce, flavorful pinto and black beans and melted cheese, this is your new go-to recipe when you need to impress in a pinch.
1 jar of SOMOS™ Red Enchilada Sauce
1 pouch of SOMOS™ Pinto & Black Beans
10 corn tortillas
½ cup vegetable oil
½ cup shredded cheese of your choice
¼ cup sour cream
¼ cup fresh cilantro, chopped
¼ cup onion, diced
Heat oil in a skillet and lightly fry each tortilla.
Fill with 1 spoonful of SOMOS™ Pinto & Black Beans
Fold and place on a baking dish.
Add SOMOS™ Red Enchilada Sauce over the enchiladas and top with cheese.
Bake for 15 minutes at 350ºF or until the cheese is melted.
