Ingredients

  • 1 jar of SOMOS™ Smoky Chipotle Medium Salsa
  • 1 pouch of SOMOS™ Mexican Black Beans
  • 12 corn tortillas
  • 2 tbsp vegetable or olive oil
  • 2 cups shredded chicken
  • 3 cups shredded cheese (Oaxaca or mozzarella)
  • 2 cups sour cream
  • ½ cup cotija cheese
  • 1 tbsp cilantro, chopped
  • 1 tbsp scallions, chopped

Prep

  1. Preheat the oven to 400° F
  2. In a large cast iron cast skillet or comal, heat oil and add tortillas
  3. Add SOMOS™ Smoky Chipotle Pepper Salsa to the bottom of a casserole dish and add a flat layer of tortillas
  4. Microwave SOMOS™ Mexican Black Beans for 90 seconds
  5. Over the tortillas, add shredded chicken, SOMOS™ Mexican Black Beans, shredded cheese & sour cream
  6. Repeat step 5 for multiple layers
  7. On the last layer, add SOMOS™ Smoky Chipotle Pepper Salsa & shredded cheese
  8. Bake for 30 minutes
  9. Carefully remove the dish from the oven – serve as is or garnish with cotija cheese, cilantro, & scallions
