Ingredients

  • 1 pouch SOMOS™ Poblano Brown Rice
  • ¾ pound shrimp, peeled & deveined
  • 1 tbsp salted butter
  • 1 green or poblano pepper, sliced
  • ½ tbsp of red pepper flakes
  • ¼ tbsp salt
  • ¼ tbsp cilantro, chopped
  • 1 lemon, juiced

Prep

  1. In a bowl, season shrimp with lemon juice, salt & red pepper flakes
  2. In a medium skillet, melt butter and add sliced pepper & shrimp, cook for 3-5 minutes or until shrimp is pink and opaque
  3. Add SOMOS™ Poblano Brown Rice into skillet and mix, let sauté for 2-3 minutes
  4. Top with cilantro & serve
