Ingredients
- 1 pouch SOMOS™ Poblano Brown Rice
- ¾ pound shrimp, peeled & deveined
- 1 tbsp salted butter
- 1 green or poblano pepper, sliced
- ½ tbsp of red pepper flakes
- ¼ tbsp salt
- ¼ tbsp cilantro, chopped
- 1 lemon, juiced
Prep
- In a bowl, season shrimp with lemon juice, salt & red pepper flakes
- In a medium skillet, melt butter and add sliced pepper & shrimp, cook for 3-5 minutes or until shrimp is pink and opaque
- Add SOMOS™ Poblano Brown Rice into skillet and mix, let sauté for 2-3 minutes
- Top with cilantro & serve
