Ingredients
- 1 pouch of SOMOSâ„¢ Mexican Brown Rice
- 1 pouch of SOMOSâ„¢ Mexican Black Beans
- 5 bell peppers, halved
- 1 cup Manchego cheese, shredded
- ½ cup cotija cheese
- 1 bunch of cilantro, chopped
Prep
- Preheat oven to 350° F
- Slice bell peppers vertically in half & remove the seeds
- Separately microwave SOMOSâ„¢ Mexican Brown Rice & SOMOSâ„¢ Mexican Black Beans for 90 seconds
- Mix SOMOSâ„¢ Mexican Brown Rice & SOMOSâ„¢ Mexican Black Beans together and add inside of each pepper
- Add Manchego cheese & cotija cheese on top of each pepper
- Place in the oven for 20-25 minutes
- Garnish with cilantro & serve
