Ingredients
- 1 pouch SOMOS™ Poblano Brown Rice
- 1 pouch SOMOS™ Mexican Black Beans
- 1 bag of SOMOS™ Unusually Thick & Crunchy Tortilla Chips
- ½ lb chicken breast or any leftover meat
- 1 avocado, sliced
- 3 cups lettuce, chopped
- 1 bell pepper, chopped
- 1 tomato, chopped
- 1 jalapeño pepper, seeds removed & chopped
- ¼ cup cilantro, chopped
- 1 scallion, chopped
- 2 limes, juiced
Prep
- Cut cooked chicken into slices and set aside in a bowl
- In a small bowl, combine tomato, onion, jalapeño, scallion, ½ of the cilantro and a pinch of salt to make Pico de Gallo
- Microwave SOMOS™ Poblano Brown Rice and SOMOS™ Mexican Black Beans together for 3 minutes.
- Assemble two bowls with all the ingredients
- Add lime juice, salt, remaining cilantro and enjoy with SOMOS™ Unusually Thick & Crunchy Tortilla Chips
