Ingredients

  • 1 tbsp oil
  • 1 - 1.5 lb skirt, flank, sirloin, or hanger steak, cut into strips (or any protein)
  • SOMOS™ Fajita Simmer Sauce
  • 1 pouch SOMOS™ Chipotle Refried Black Beans
  • 1lb steak, seasoned & cooked to your liking
  • 1 ½ cup mozzarella cheese, shredded
  • 4-6 flour tortillas, large burrito size
  • 2 tbsp vegetable or olive oil
  • 2 tbsp cilantro, chopped

Prep

  1. Heat 1 tablespoon of oil over medium-high heat and add protein of choice, stirring occasionally until the meat is cooked through.
  2. Ad SOMOS™ Fajita Simmer Sauce and let simmer for 5 mins.
  3. Microwave SOMOS™ Chipotle Refried Black Beans for 90 seconds
  4. Heat cast iron skillet or comal and add 1 tortilla at a time
  5. Spread a generous amount of SOMOS™ Chipotle Refried Black Beans onto half of the tortilla and load that half with cheese and steak
  6. Fold in half and let sit for 2-4 minutes or until cheese melts
  7. Transfer quesadilla to a plate and cut into quarters
