Ingredients
- 1 pouch of SOMOS™ Cauliflower Tinga
- 6 corn tortillas
- ¼ cup white onion, diced
- ½ tomato, diced
- 1 jalapeño, diced
- 3 tbsp cilantro, chopped
- 1 avocado, mashed
- 1 lime, cut into wedges
- 2 tbsp vegetable or olive oil
Prep
- In a large cast iron skillet or comal, heat oil and cook tortillas until warm and pliable
- In a small bowl, combine mashed avocado, ½ of the onion, ½ of the jalapeño, 1 tbsp of cilantro, and a pinch of salt
- Stir to combine
- Spread the contents from the small bowl evenly onto each tortilla
- Microwave SOMOS™ Cauliflower Tinga for 90 seconds and scoop it onto the tortillas
- Garnish with the remaining onion, tomato, jalapeño, and cilantro
- Serve with lime & enjoy!
