Ingredients

  • 1 jar of SOMOS™ Salsa Macha Mexican Chili Crisp Nuts & Seeds
  • 1 pouch of SOMOS™ Mexican Black Beans
  • 6 corn tortillas
  • 6 eggs
  • ½ avocado, sliced
  • 4 tbsp olive oil or vegetable oil

Prep

  1. In a large cast iron skillet or comal, heat 2 tbsp oil and cook tortillas until warm and pliable, flip when crispy
  2. Microwave SOMOS™ Mexican Black Beans for 90 seconds and spread on top of tortillas
  3. Separately heat the remaining 2 tbsp of oil on a non-stick frying pan until simmering
  4. Crack eggs into the pan and cover with a lid. Cook for 2 minutes until the whites of the eggs are opaque
  5. Remove from heat and leave covered for 30 seconds to finish cooking
  6. Top each tortilla with 1 egg & sliced avocado
  7. Drizzle everything SOMOS™ Salsa Macha Mexican Chili Crisp Nuts & Seeds
