Ingredients
- 1 pouch of SOMOS™ Cauliflower Tinga
- 6 corn tortillas or store-bought tostadas
- 1 avocado, mashed
- ¼ cup red onion, finely diced
- 1 jalapeño, finely diced
- 3 tbsp cilantro, chopped
- ¼ cotija cheese
- 1 radish, thinly sliced
- ¼ cup crema or sour cream
- 1 lime, juiced
- 1 lime, cut in wedges
- Optional: ¼ cup vegetable oil
Prep
- In a small bowl or molcajete, combine avocado, jalapeño, 2 tbsp of cilantro, red onion, lime juice, and a pinch of salt to make guacamole
- If making your own tostadas, heat oil over medium heat in a heavy-bottomed pan. Add corn tortillas one at a time and fry on each side for 2 minutes or until lightly golden brown and crispy. Move to a towel-lined plate and sprinkle with salt
- Microwave SOMOS™ Cauliflower Tinga for 90 seconds
- Spread guacamole on tostadas and top with SOMOS™ Cauliflower Tinga
- Garnish with cotija cheese, crema, and radish. Serve with lime
