Ingredients

  • 2 pouches SOMOS Cilantro Lime White Rice
  • 2 tbsp water
  • 1 tsp extra-virgin olive oil
  • 1.5 lbs lean ground turkey
  • ½ pouch SOMOS Taco Simmer Sauce
  • 1 red bell pepper, diced
  • 2 pouches SOMOS Mexican Street Corn Pinto & Black Beans
  • Shredded mozzarella cheese
  • Fresh cilantro, chopped

Prep

1. Prepare the Rice: In a medium skillet over medium heat, combine 2 pouches of SOMOS Cilantro Lime White Rice with 2 tablespoons of water. Stir gently to blend, cover, and let simmer for about 5 minutes until heated through and fluffy. Set aside, keeping it warm.

2. Cook the Turkey Mix: Heat 1 teaspoon of olive oil in a large skillet over high heat. Add the ground turkey and cook, breaking it apart with a spatula, until it’s halfway cooked (about 5 minutes). Stir in ½ pouch of SOMOS Taco Simmer Sauce, letting the bold flavors coat the turkey. Continue cooking, stirring occasionally, until the sauce thickens and caramelizes, about 8-10 minutes. Toss in the diced red bell pepper and 2 pouches of SOMOS Mexican Street Corn Pinto & Black Beans. Stir and cook for an additional 5 minutes until the peppers soften slightly and the beans are warmed through. Turn off the heat, sprinkle generously with shredded mozzarella, and scatter fresh cilantro over the top. Cover for 2-3 minutes to let the cheese melt into a creamy, gooey layer.

3. Assemble Your Power Bowls: Divide the cilantro-lime rice evenly among 5 meal prep containers, filling one side. Spoon the savory turkey, bean, and pepper mixture into the other side.
