Ingredients

  • 1 jar of SOMOS™ Green Enchilada Sauce
  • 1 ½ cups shredded rotisserie chicken
  • 10 corn tortillas
  • ½ cup vegetable oil
  • ½ cup shredded cheese of your choice
  • ¼ cup sour cream
  • 4 radishes, thinly sliced
  • 1 jalapeño pepper, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • ¼ cup red onion, diced

Prep

  1. Heat oil in a skillet and lightly fry each tortilla.
  2. Fill with shredded chicken and a tablespoon of SOMOS™ Green Enchilada Sauce
  3. Fold and place on a baking dish.
  4. Add remaining SOMOS™ Green Enchilada Sauce and cheese on top.
  5. Bake for 15 minutes at 350ºF or until the cheese is melted.
  6. Top with sour cream, radishes, jalapeño, cilantro and red onion.
