Ingredients
- 1 jar of SOMOS™ Fire Roasted Mild Salsa
- 1lb baby potatoes, cut in half
- 3 tbsp unsalted butter or olive oil
- Salt & pepper
- 2 cups shredded cheese (Oaxaca or mozzarella)
- ½ cup cotija cheese
- 1 tsp red pepper flakes
- 1 tbsp chives, chopped
- 1 tbsp cilantro, chopped
Prep
- Preheat a grill or oven to 400° F
- In aluminum foil, place halved baby potatoes and add butter, salt & pepper
- Fold the foil around all slides, sealing all ingredients in tightly
- Place the packet in the oven or on the grill for 30 minutes
- Carefully remove the packet and open the foil
- Pour SOMOS™ Pasilla Pepper Salsa Ranchera over the potatoes & add the shredded cheese on top
- Seal the aluminum foil again and cook in the oven or grill for an additional 15 minutes
- Carefully remove the packet and open the foil; garnish with cotija cheese, red pepper flakes, chives & cilantro
- Serve with foil opened & enjoy!
