Ingredients

  • 1 lb chicken breast, sliced into strips
  • 1 pouch SOMOS Fajita Simmer Sauce
  • 1 bell pepper, sliced
  • 1 small onion, sliced
  • 1 pouch SOMOS Fajita White Rice
  • 1 pouch SOMOS Pinto & Black Beans
  • Sour cream, for topping
  • Avocado, sliced, for topping

Prep

  1. Heat a skillet over medium heat and cook the sliced chicken until lightly browned and cooked through, about 5–6 minutes.
  2. Add the SOMOS Fajita Simmer Sauce to the pan and stir to coat the chicken, then add the sliced peppers and onions. Simmer for 5–7 minutes until the veggies are tender and everything is saucy and flavorful.
  3. Microwave the SOMOS Fajita White Rice and Pinto Black Beans together for 3 minutes
  4. Assemble bowls: start with rice, then beans, top with fajita chicken and peppers & onions, and finish with sour cream and avocado.
