Ingredients

  • 1 pouch SOMOS™ Chipotle Refried Black Beans
  • 5 tortillas, corn or flour
  • 2 tbsp pico de gallo
  • 1 tbsp crema or sour cream
  • 1 tbsp grated cheese of your liking
  • ½ avocado, sliced
  • 1 tbsp cilantro, chopped

Prep

  1. Heat medium skillet and add SOMOS™ Chipotle Refried Black Beans & 1tbsp of water - stir frequently, until warm and bubbly
  2. Turn off the heat and dip one tortilla at a time into the beans, turning to coat both sides and leaving until softened, about 2-3 minutes
  3. Transfer tortilla to a plate and roll it up or fold in half like a taco
  4. Pour remainder of SOMOS™ Chipotle Refried Black Beans on top of plated tortillas
  5. Top the coated tortillas or enrijoladas with pico de gallo, sour cream, cheese & garnish with avocado and cilantro
