Ingredients
- 1 pouch SOMOS™ Chipotle Refried Black Beans
- 5 tortillas, corn or flour
- 2 tbsp pico de gallo
- 1 tbsp crema or sour cream
- 1 tbsp grated cheese of your liking
- ½ avocado, sliced
- 1 tbsp cilantro, chopped
Prep
- Heat medium skillet and add SOMOS™ Chipotle Refried Black Beans & 1tbsp of water - stir frequently, until warm and bubbly
- Turn off the heat and dip one tortilla at a time into the beans, turning to coat both sides and leaving until softened, about 2-3 minutes
- Transfer tortilla to a plate and roll it up or fold in half like a taco
- Pour remainder of SOMOS™ Chipotle Refried Black Beans on top of plated tortillas
- Top the coated tortillas or enrijoladas with pico de gallo, sour cream, cheese & garnish with avocado and cilantro
