Ingredients
- 1 jar of SOMOS™ Fire Roasted Mild Salsa
- 1 pouch of SOMOS™ Mexican Black Beans
- 1 tbsp vegetable or olive oil
- 6 corn tortillas
- 3 eggs
- ¼ cup milk
- 1 tsp butter
- Salt & pepper
- ¼ cup cotija cheese
- ½ avocado, sliced
- ¼ red onion, sliced
- 2 tbsp cilantro, chopped
Prep
- Mix 3 large eggs & milk with a pinch of salt & pepper together until thoroughly blended
- On a small, non-stick frying pan, heat butter until melted then pour the egg mixture into the frying pan and let sit without stirring for a few seconds
- After a few seconds, stir with a wooden spoon, lifting & folding it over from the bottom of the pan; until the eggs are soft and lightly scrambled
- In a large cast iron cast skillet or comal, heat oil and add tortillas
- Divide the eggs onto tortillas
- Microwave SOMOS™ Mexican Black Beans for 90 seconds & scoop over each taco
- Top each taco with cotija cheese, avocado, red onion slices & cilantro
- Finish it off with a drizzle of SOMOS™ Pasilla Pepper Salsa Ranchera
