Ingredients

  • 1 jar of SOMOS™ Salsa Macha Mexican Chili Crisp Mango & Pineapple
  • 1 pouch of SOMOS™ Mexican Black Beans
  • 1 tbsp vegetable or olive oil
  • 6 corn tortillas
  • 3 eggs
  • ¼ cup milk
  • 1 tsp butter
  • Salt & pepper
  • ½ avocado, sliced
  • ¼ red onion, sliced
  • 2 tbsp cilantro, chopped

Prep

  1. In a bowl, scramble 3 large eggs and combine with milk with a pinch of salt & pepper until thoroughly blended
  2. On a small, non-stick frying pan, melt butter then pour the egg mixture into the frying pan
  3. After letting the eggs sit for a few seconds, stir with a wooden spoon, lifting & folding it over from the bottom of the pan until the eggs are soft and lightly scrambled
  4. In a large cast iron cast skillet or comal, heat oil and add tortillas to warm
  5. Divide the eggs onto tortillas
  6. Microwave SOMOS™ Mexican Black Beans for 90 seconds & scoop over each taco
  7. Top each taco with avocado, red onion slices & cilantro
  8. Finish it off with a drizzle of SOMOS™ Salsa Macha Mexican Chili Crisp Mango & Pineapple
