Ingredients
- 1 jar of SOMOS™ Salsa Macha Mexican Chili Crisp Mango & Pineapple
- 1 pouch of SOMOS™ Mexican Black Beans
- 1 tbsp vegetable or olive oil
- 6 corn tortillas
- 3 eggs
- ¼ cup milk
- 1 tsp butter
- Salt & pepper
- ½ avocado, sliced
- ¼ red onion, sliced
- 2 tbsp cilantro, chopped
Prep
- In a bowl, scramble 3 large eggs and combine with milk with a pinch of salt & pepper until thoroughly blended
- On a small, non-stick frying pan, melt butter then pour the egg mixture into the frying pan
- After letting the eggs sit for a few seconds, stir with a wooden spoon, lifting & folding it over from the bottom of the pan until the eggs are soft and lightly scrambled
- In a large cast iron cast skillet or comal, heat oil and add tortillas to warm
- Divide the eggs onto tortillas
- Microwave SOMOS™ Mexican Black Beans for 90 seconds & scoop over each taco
- Top each taco with avocado, red onion slices & cilantro
- Finish it off with a drizzle of SOMOS™ Salsa Macha Mexican Chili Crisp Mango & Pineapple
