Ingredients

  • 1 pound peeled & deveined shrimp
  • 1 pouch SOMOS™ Al Pastor Taco Simmer Sauce
  • 1/2 fresh, ripe pineapple
  • Skewers
  • SOMOS™ Mexican Yellow Rice

Prep

  1. Pour ¾ of the SOMOS™ Al Pastor Taco Simmer Sauce into a medium bowl. Take the remaining simmer sauce and pour into a small bowl - leave to the side. Add the shrimp and mix to fully cover. Let sit while continuing prep.
  2. Meanwhile, core and cube the pineapple into 1 inch cubes.
  3. Alternating ingredients, thread the marinated shrimp and pineapple cubes on the skewers. Place skewers on a baking tray or plate.
  4. Preheat an oiled grill or grill pan over medium heat.
  5. Place skewers on grill over medium heat for approximately 3 minutes per side. Before flipping, brush shrimp with the remaining Al Pastor Simmer Taco Sauce. Remove skewers once shrimp starts to curl and turn pink. Be careful not to overcook.
  6. Serve over a bed of SOMOS™ Mexican Yellow Rice. Drizzle with additional lime and freshly chopped cilantro.
