Ingredients
- 1 pound peeled & deveined shrimp
 - 1 pouch SOMOS™ Al Pastor Taco Simmer Sauce
 - 1/2 fresh, ripe pineapple
 - Skewers
 - SOMOS™ Mexican Yellow Rice
 
Prep
- Pour ¾ of the SOMOS™ Al Pastor Taco Simmer Sauce into a medium bowl. Take the remaining simmer sauce and pour into a small bowl - leave to the side. Add the shrimp and mix to fully cover. Let sit while continuing prep.
 - Meanwhile, core and cube the pineapple into 1 inch cubes.
 - Alternating ingredients, thread the marinated shrimp and pineapple cubes on the skewers. Place skewers on a baking tray or plate.
 - Preheat an oiled grill or grill pan over medium heat.
 - Place skewers on grill over medium heat for approximately 3 minutes per side. Before flipping, brush shrimp with the remaining Al Pastor Simmer Taco Sauce. Remove skewers once shrimp starts to curl and turn pink. Be careful not to overcook.
 - Serve over a bed of SOMOS™ Mexican Yellow Rice. Drizzle with additional lime and freshly chopped cilantro.
