Ingredients
- 1 pouch of SOMOS™ Mexican Street Corn White Rice
- 1 jar of SOMOS™ Smoky Chipotle Medium Salsa
- 1 egg
- 1 tbsp cilantro, chopped
- 1/2 cup parmesan cheese, grated
- ½ tsp salt
- ½ tsp ground black pepper
- 2 tbsp of flour
Prep
- Preheat the oven or air fryer to 400° F
- In a bowl, mix SOMOS™ Mexican Street Corn White Rice, egg, salt, cilantro, cheese, pepper and flour
- With the help of 2 spoons, shape the croquettes
- Place croquettes in the air fryer and spray with olive oil spray, cook for 10 minutes or in the oven for 15-20 minutes
- Serve with SOMOS™ Smoky Chipotle Red Salsa
