Ingredients

  • 1 pouch of SOMOS™ Cilantro Lime White Rice
  • 1 pouch of SOMOS™ Red Enchilada Sauce
  • Tortilla Chips
  • 4 cups chicken or vegetable broth
  • 1 cup shredded chicken
  • Salt & pepper
  • ½ cup onion, sliced
  • 2 tbsp cilantro, chopped
  • ½ avocado sliced

Prep

  1. In a large pot, heat chicken or vegetable broth until it comes to a boil
  2. Add entire jar of SOMOS™ Red Enchilada Sauce and shredded chicken to pot; lower heat and let simmer for 5 minutes
  3. Microwave SOMOS™ Cilantro Lime White Rice for 90 seconds and add to pot
  4. Add salt & pepper as needed
  5. Serve the soup into individual bowls
  6. Garnish each bowl with crushed Tortilla Chips, sliced onion, cilantro & avocado slices
