Ingredients
- 1 pouch of SOMOS™ Cilantro Lime White Rice
- 1 pouch of SOMOS™ Red Enchilada Sauce
- Tortilla Chips
- 4 cups chicken or vegetable broth
- 1 cup shredded chicken
- Salt & pepper
- ½ cup onion, sliced
- 2 tbsp cilantro, chopped
- ½ avocado sliced
Prep
- In a large pot, heat chicken or vegetable broth until it comes to a boil
- Add entire jar of SOMOS™ Red Enchilada Sauce and shredded chicken to pot; lower heat and let simmer for 5 minutes
- Microwave SOMOS™ Cilantro Lime White Rice for 90 seconds and add to pot
- Add salt & pepper as needed
- Serve the soup into individual bowls
- Garnish each bowl with crushed Tortilla Chips, sliced onion, cilantro & avocado slices
