Ingredients
- 1 pouch of SOMOS™ Pinto & Black Beans
- ½ tsp chili powder
- ¼ tsp cumin
- ½ tsp salt
- ¼ cup red onion, chopped
- 1 tsp garlic, minced
- ¼ cup bell pepper, chopped
- ¼ cup yellow squash, chopped
- ¼ cup zucchini, chopped
- ½ cup veggie or chicken broth
- 1 bag of SOMOS™ Unusually Thick & Crunchy White Corn Tortilla Chips
- Jalapeño slices
- Fresh cilantro
- Sour cream
Prep
- Heat olive oil in a pot over medium heat.
- Add onion, garlic and sauté for 2 minutes.
- Add the rest of the vegetables and seasonings.
- Add the broth and simmer for 5 minutes.
- Add SOMOS™ Pinto & Black Beans pouch and cover the pot. Simmer for 3-5 minutes.
- Serve with jalapeño slices, fresh cilantro and sour cream on top.
- Enjoy with a bag of SOMOS™ Unusually Thick & Crunchy White Corn Tortilla Chips
