Ingredients

  • 1 pouch of SOMOS™ Pinto & Black Beans
  • ½ tsp chili powder
  • ¼ tsp cumin
  • ½ tsp salt
  • ¼ cup red onion, chopped
  • 1 tsp garlic, minced
  • ¼ cup bell pepper, chopped
  • ¼ cup yellow squash, chopped
  • ¼ cup zucchini, chopped
  • ½ cup veggie or chicken broth
  • 1 bag of SOMOS™ Unusually Thick & Crunchy White Corn Tortilla Chips
  • Jalapeño slices
  • Fresh cilantro
  • Sour cream

Prep

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic and sauté for 2 minutes.
  3. Add the rest of the vegetables and seasonings.
  4. Add the broth and simmer for 5 minutes.
  5. Add SOMOS™ Pinto & Black Beans pouch and cover the pot. Simmer for 3-5 minutes.
  6. Serve with jalapeño slices, fresh cilantro and sour cream on top.
  7. Enjoy with a bag of  SOMOS™ Unusually Thick & Crunchy White Corn Tortilla Chips
