Ingredients

  • SOMOS™ Red Enchilada Sauce
  • 1 lb Ground Beef, Chicken or Turkey
  • 1 pouch of SOMOS™ Mexican Street Corn Pinto & Black Beans
  • 12 corn tortillas
  • 8 oz cheddar, shredded
  • 8 oz Monterey Jack, shredded
  • 1 yellow onion, diced
  • 2 tbs avocado oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup water
  • Toppings of choice

Prep

  1. Preheat oven to 400 F;
  2. Dice onion and saute in avocado oil until softened; crumble ground beef, season salt and pepper
  3. Add in your Red Enchilada Sauce and Mexican Street Corn Pinto & Black Beans, water and bring to simmer
  4. In a 9x13 casserole dish layer meat sauce on the bottom followed by 4 tortillas, more meat sauce and shredded cheeses; repeat 3 times;
  5. Bake covered for 20 minutes and uncovered 20 minutes;
  6. Top with diced tomatoes, green onions, avocado, sour cream and devour!
